RECIPE – Mediterranean Sausage Casserole

I’ve been meaning to add this recipe for a while, it’s not the most glamorous of dishes but it is a MASSIVE hit with the girls, it’s a ‘chuck it all in the slow cooker and forget it’ meal,  and there are lots of sneaky veges hidden in it too…

Mediterranean Sausage Casserole

Ingredients
  • 8-10 good quality lamb or beef sausages
  • 500ml tomato passata sauce OR 2 tins of crushed tomatoes
  • 1 zucchini, grated
  • 1 onion, chopped
  • 1 red capsicum, chopped
  • 1 TB crushed garlic
  • Handful of black olives, chopped
  • 2 TB olive tapenade
  • 400g cooked pasta
  • Salt and pepper to taste
Instructions
  1. Place the sausages into the slow cooker bowl
  2. Pour the tomato passata sauce or crushed tomatoes over the sausages
  3. Add zucchini, onion, red capsicum, garlic and olives
  4. Mix gently until the sausages are combined with the sauce
  5. Cook on High for 4 hours, or low for 8 hours
  6. Immediately before serving, use a knife or serving spoon to chop sausages into large chunks, add the cooked pasta and mix gently until combined
  7. Serve as a standalone dish, or with a side salad
